The weekend can’t come quick enough, ensuring you get the most out of your weekend requires a little bit of pre-planning. But don’t worry, we’ve got it covered.

Nan’s Pikelets

There’s nothing like wandering into your grandparent’s house and smelling sweet baked goods and the table laid with a doily tablecloth and scattered in plates. We’re taking a step back in time and baking with our Nan’s and Gran’s, or whomever you treasure great cooking memories with. 

What you’ll need:

·       1 Egg

·       ¼ cup Sugar

·       ¾ cup Milk (a loving dash may mean a little more or less)

·       1 cup Flour

·       1 teaspoon Baking Powder

·       ¼ teaspoon Salt

·       25 g Butter (optional)

·       Toppings – Seasonal berries and fruits, maple syrup, ice cream and lashings of any of your favourite toppings


Step 1: Beat the egg and sugar until thick

Step 2: Add milk to the egg and sugar mixture

Step 2: Sift flour, salt and baking powder in a separate bowl

Step 3: Add milk mixture into the flour mixture

Step 4: Melt the butter in the microwave

Step 5: Add melted butter to the mixture, and mix until smooth

Step 6: Heat your pan and lightly butter for a greased surface

Step 7: Cook pikelet mix in spoonful’s until golden brown on each side

Step 8: Create a stack of pikelets and add your favourite toppings, eat warm


Easy Pancakes with Strawberry Syrup

Between work, home renovations and kids’ activities, life can be a little hectic. So, take it easy and work from a pre-made mix. Pancakes are pancakes, no matter where they come from. You can jazz up a pre-made mix with our glorious Simple Strawberry Syrup. Even if you’re not the greatest chef, it’d be pretty hard to stuff these up. Have a whirl and share your pics with us.

What you’ll need:

·       Pancake Mix

·       1 ¼ cup whole Milk

·       ½ Punnet of Strawberries, chopped

·       2 Tablespoons of Sugar

 

Instructions:

Follow instructions on the box as each mixture is different, but our personal premade mix is The Pancake Parlour Buttermilk Pancake Mix and it’s super easy to follow.

 

The Pancake Parlour Buttermilk Pancake Mix

Step 1: Quickly hand whisk until batter is fairly smooth

·       1 cup Pancake Mix

·       1 ¼ cups of whole milk

 

Step 2: Stand for 10 minutes, and DON’T mix again

 

Step 3: For each pancake, pour approximately ½ cup of mixture onto a lightly buttered hot plate at 175 – 180 and cook until golden brown

·       Approx 90 seconds, side 1

·       Approx 60 seconds, side 2

·       Add additional milk for thinner pancakes

·       Plate and complete with your favourite toppings

 

Simple Strawberry Syrup:

Step 1: Finely chop the ½ punnet of strawberries into slithers.

Step 2: Add chopped strawberries to a non-stick pan on low heat, stir for one to two minutes or until soft.

Step 3: Add sugar to pan and stir through. Allow to simmer for 5-10 minutes. Stir occasionally, until mixture has thickened into a light syrup.

Step 4: Remove the strawberry syrup from heat and drizzle over pancakes to serve.
