Loads of Chocolate
There’s nothing worse than getting a delicious looking studded cookie and then realising they’re raisins not chocolate. We insist you go over the top with the chocolate, personally we mix a bit of milk and dark for the perfect combo. Feel free to break up your favourite chocolate bar and then some to get the perfect bite every time!
Serving: 6 - 12 biscuits
Prep Time: 20 minutes
Cook Time: 12 minutes
Ingredients:
125 grams of butter, melted
3/4 cup packed brown sugar
1/4 granulated white sugar
2 tablespoons golden syrup
2 teaspoons vanilla extract
1 egg
1 1/2 cup of plain flour
1/4 teaspoon baking soda
Pinch of salt
30 grams of Milk Cooking Chocolate
30 grams of Dark Cooking Chocolate
Instructions:
Preheat your oven to 180°C and line a baking sheet with baking paper
Microwave the butter for about 30 seconds until barely melted (half soft, half melted)
Beat the butter with the brown and white sugar until pale and creamy in colour, sugar has dissolved.
Pour in the golden syrup, vanilla extract and the egg. Lightly beat until mixed through
Add flour, baking soda and salt mixing until combined. If needed add one tablespoon of extra flour at a time until the dough is soft but easy to handle and firm enough to form a ball
Break up chocolate and chop into chunks
Fold the chocolate in with your hands
Scoop out 6-12 balls and arrange them on the lined baking sheet with baking paper.
Tip: We use an ice cream scoop to make evenly sized balls
Place cookies in oven for 12 minutes, and bake for 1 minutes. Cookies will be soft but will continue to bake once left to cool
Allow cookies to cool on tray for 15 minutes. Do not move cookies as they may break
Once the cookies are cooled and slightly hardened, plate them up and enjoy with a cup of tea or cold milk
