Christmas Rocky Road
Add a little twist to your traditional rocky road with this recipe, which incorporates shortbread and raspberry jellies. Give it as a gift or serve as a sweet treat to kick off your Christmas celebrations.
Note: You can easily substitute any additions with your preferred favourite treats. Try pretzels instead of peanuts, or gingerbread instead of shortbread. Your options are limitless.
Ingredients:
· 720g Milk Chocolate Block
· 1 cup of unsalted peanuts
· 380g raspberry lollies halved
· 300g Marshmallows halved
· 1 batch of our Christmas Shortbread – Bake our Christmas Shortbread here
· 208g Cherry Ripe bars (4 individual bars chopped)
Method:
1. Grease the base and sides of a 20cm x 30cm baking pan. Line with baking paper, allowing the sides to overhand
2. Break 800g of Milk Chocolate into a heatproof bowl. Microwave the milk chocolate for 30 seconds (or 20 seconds if at a high temperature) then take the bowl out and give it a stir. Place bowl back in the microwave and repeat the process of cooking for 30 seconds, stopping, stirring and returning to the microwave until the chocolate is melted and smooth
3. Pour chocolate into prepared baking pan
4. Sprinkle unsalted peanuts, raspberry lollies, marshmallows, crushed Christmas shortbread and cherry ripe bar into pan. Push filling to the bottom of the pan and repeat until the chocolate is filled.
5. Refrigerate mixture for 1 hour to set. Cut into pieces to serve.
